Mango Kulfi

Tony Singh is the Scottish chef and restauranteur behind Tony's Table, situated in the heart of Edinburgh's city centre at North Castle Street.

Leith-born Tony has established himself as a leading force on the international restaurant scene as co-founder of the award-winning restaurant, Oloroso, also located in Edinburgh, Scotland.

Tony's Table brings a relaxed dining concept to the city centre with a fresh focus on hearty, wholesome dishes, presented in a bistro-style restaurant.

The following is Tony's famous Mango Kulfi.

 

Mango Kulfi

Ingredients

250ml milk

250ml whipping cream

2 tbsp corn flour

250g caster sugar

125ml water

2 pinches of fresh saffron

1 can condensed milk

300g mango puree

 

Method

Bring milk, cream, and saffron to simmer in a heavy bottomed pan.

Gradually whisk 1/2 of sugar, mix the water and the corn flour, then stir into the hot milk mixture.

Stir over medium-low heat until custard thickens. Strain custard into a bowl and refrigerate until cold.

Combine the mango, condensed milk, and the rest of the sugar in a food processor and mix until smooth, then add to custard and pour into moulds, serve that evening for best results. Use within two days.
